We love a smoky grilled piece of meat, fish or chicken as much as anyone, but vegetables enjoy just as prominent a place on our grates. Whether you’re a full-time vegetarian or just looking for summer grilling inspiration, here are some tasty and healthy dishes to light your fire.
Grilled Eggplant Burgers with Halloumi Cheese
We’re firm believers that anything good is better with halloumi. This Mediterranean cheese is firm enough to hold up on the grill without melting, so you get all the creamy, salty goodness of cheese combined with the smokiness of the grill. Placed atop grilled eggplant and slathered with pesto, it’s a hearty and satisfying break from beef.
Spicy Grilled Cauiflower Steaks
Forget florets and “rice”—cut cauliflower into slabs and it takes on a knife-and-fork steak-like main-dish quality, especially when you brush it with a spicy mix of chipotles in adobo, garlic and molasses. Serve it with slaw and your other fave BBQ sides and you won’t miss the meat at all.
Grilled Kale Salad with Lemon Vinaigrette
This recipe had us at “grilled kale,” but with peaches and toasted hazelnuts on top, it’s a winner. Make a double batch of the simple vinaigrette and use it on salads all week.
With bell peppers, sweet onions, zucchini, mushrooms and cherry tomatoes, along with the tofu, these skewers are a meat-free meal on a stick. Slather on the homemade barbecue sauce in the recipe or take a shortcut and use your fave low-sugar bottled one (here’s one we love).
Grilled Margherita Pizza
If there’s one thing omnivores and vegetarians can agree on, it’s the virtues of pizza—and pizza on the grill is sublime. DIY the dough, buy it from your local pizza joint or Trader Joe’s—even go for a grain-free variety like this one. However you slice it (sorry), you don’t need meat to enjoy the heck out of a grilled pizza.
