Chicken is a staple for many of us because it’s a versatile, lean source of protein. But you don’t have to slather chicken in cheese, bread it, or fry it to make it taste great. It’s what you put with it — colorful veggies, herbs and spices, flavorful marinades, and healthy fats — that can really make it shine. Next time dinner rolls around and you’re thinking about what to do with the frozen free-range chicken breast you have stashed in the fridge, remember everything from mango salsa chicken to Instant Pot chicken burrito bowls is possible.

1. Mango Salsa Chicken from Creme de la Crumb

You had us at mango. The salsa is the star of this dish and it comes together easily with bell pepper, cilantro, and red onion. While you’re putting that together the chicken is marinated with cumin, chili powder, garlic powder. 2. Honey Balsamic Chicken Breasts and Veggies from Damn Delicious
