Chicken is a staple for many of us because it’s a versatile, lean source of protein. But you don’t have to slather chicken in cheese, bread it, or fry it to make it taste great. It’s what you put with it — colorful veggies, herbs and spices, flavorful marinades, and healthy fats — that can really make it shine. Next time dinner rolls around and you’re thinking about what to do with the frozen free-range chicken breast you have stashed in the fridge, remember everything from mango salsa chicken to Instant Pot chicken burrito bowls is possible.
You had us at mango. The salsa is the star of this dish and it comes together easily with bell pepper, cilantro, and red onion. While you’re putting that together the chicken is marinated with cumin, chili powder, garlic powder. The recipe comes with baking and grilling instructions so choose your own adventure with this one!
Want to see how easy dinner in 30 minutes can be? Marinate some chicken with balsamic vinegar, honey, Dijon mustard and dried herbs; add some potatoes and tomatoes; sprinkle with parsley and cook it together in one pan. Dinner in 30 minutes.
There’s no deep frying going on here, and no extra sticky and sweet sauce. Instead, you’ve got a recipe with fresh orange juice and zest, honey, and a little bit of heat. Serve this stir-fry with rice and dinner is ready.
Loaded with veggies, seasonings you likely have right in your pantry, and black beans, this makes your house smell incredible. Make up some cauliflower rice while the chicken does its thing.
It’s all in the marinade. This one’s both sweet and spicy and we can imagine serving it with a side of rice (cauliflower or otherwise) and some good steamed green veggies. Plus, it makes extra, which means you have more than one meal in store.
The chicken gets grilled with just salt and pepper, and the slaw makes it all come to life with a little bit of lime juice, fish sauce, and coconut milk.
It’s easy to make up this chicken and assemble these lettuce wraps for lunch (or dinner) as the week goes on. Cook once, eat multiple times. Always a good way to go!
