Today we humbly gather as a nation to appreciate the glorious chocolate chip cookie. When we first learned that the chewy, gooey dessert staple has a day of its very own, we knew we had to find a #CleanPlates-approved way to celebrate.

We took one look at these cookie bars from healthy blogger Rachel Mansfield and have been salivating ever since. They’re vegan and gluten-free, and take just 30 minutes to make. Oh, and did we mention that there’s no oven required? In other words, you can treat yourself on #NationalChocolateChipCookieDay without the fuss, over-heated kitchen or crazy sugar rush.
