Since the food truck explosion began in LA—thanks in large part to Roy Choi’s Korean fusion tacos—the scene has exploded with every imaginable edible. Here are a few trucks worth tracking down:
- The Green Truck is an eco-fantasy come true: the fleet of trucks have diesel engines converted to run on vegetable oil, the kitchens run entirely on solar power and they use only recyclable or compostable packaging. Plus, all ingredients are organic and as local as possible, whether it’s a grass-fed hamburger, free-range jidori chicken sandwich or the signature Mother Trucker vegan burger (pictured above).
- The Frankenstand might get its name from a monster, but there’s nothing spooky about this truck’s selection of minimally processed, delicious artisanal vegan sausages. Plus, check out the inspired condiment selection, a veritable buffet full of healthful offerings like fermented sauerkraut, pickles, freshly chopped onion and jalapeño.
- Yalla Falafel knows how to make a chickpea patty sing. Think overflowing pitas stuffed with an abundance of as-local-as-possible veggies like crunchy red cabbage salad, pickled turnips and carrots and tomato and cucumber salad. Their veggie and vegan offerings take falafel on a global tour, inspired by the flavors of Thailand, Greece, Italy, the Southwest and (but of course) the Middle East.
