With a box of chicken broth — or some you’ve made yourself and frozen at home — we always have the beginnings of a meal. It’s responsible for so many cooking tasks. It can help deglaze a pan. It is often combined with other ingredients to make sauces and gravies, but it is, in its own right, a cooking liquid that imparts a ton of flavor. Be sure to choose a low sodium chicken broth option so you can adjust the salt to your preference.
If you’re wondering what to do with the broth that’s languishing in your pantry, here’s some inspiration that goes is truly thinking outside the box! Use it in a dairy-free risotto with chicken, as the cooking liquid for a creamy polenta dish or a creative couscous salad, and, of course, as the backbone of soups that go beyond chicken noodle.
There’s no rule that says that risotto has to be loaded with lots of cheese. In fact, this one is brimming with veggies such as peas, onions, and peppers, and a couple of cups of shredded or cubed chicken (good use of leftovers!) Gluten free, too!
Instead of water, cook your quinoa in chicken broth for extra flavor while you prep the rest of the ingredients, which include black beans, feta, and pepitas.
Why make polenta with water when you can use chicken stock instead? Make it healthier by cutting back on the cheese and loading up on more veggies if you like!
As written, this recipe is vegan and calls for veggie stock but if you’ve got chicken stock, there’s no reason why you can’t use it. Miso and carrots are so good together in a soup, and this one’s no exception.
Sweet potatoes, curry paste, baby spinach, coconut milk and stock. Dinner in 20 minutes but it tastes like it took all day!
The most obvious destination for a carton of chicken stock is without a doubt soup. However, go beyond chicken noodle with some pantry staples, chicken, and stock and you’ve got a tortilla soup.
Make this up for dinner and you’ll have leftovers for the next day’s lunch. Couscous cooks in the chicken broth, veggies roast in the oven, and it comes together with some goat cheese and pepitas.
